Sales, Menus & Recipes: High Altitude Cooking Featured

Some cooking requires adjustments for high altitude.

Most cooks living at high altitude know that over 3500 feet some adjustments must be made to recipes when baking. Cakes especially may require tweaking baking time and or amounts of some ingredients. 

But did you know that candy making may also require adjustment. If making a sugar syrup type candy like nut brittle or butter crunch your recipe will say something like  “Cook until the temperature reaches 300º F.” But if you live at 5000 ft, and you follow those directions, your candy will be seriously overcooked.

Most recipes are tested at close to sea level. Due to reduced air pressure, for every 1000 ft above sea level, the boiling point of water goes down two degrees Fahrenheit. 

To adjust the temperature for making hard candies like brittles or for making candied fruit or peel, you need to use a candy thermometer. Taking the temperature from the recipe as your target temperature, you will need to reduce that target by 1º F for every 500 feet of altitude. For example, if the recipe says “cook to 300º F and you live at 5000 ft., you will need to reduce your target temperature to 290º F.
