Sales, Menus & Recipes: Chocolate is Always Popular Featured

This week Thursday January 10th is Bittersweet Chocolate Day.

With Valentines Day a mere month away what is your chocolate IQ? Do you know what defines bittersweet chocolate? What do those numbers on chocolate bars mean?

Not too long ago there was milk chocolate, baking chocolate, cocoa powder, and maybe something called dark chocolate. Now types and brands of chocolate have proliferated. The basis of all chocolate is Cocoa Mass. Cocoa Mass or Chocolate Liquor consists of only coco butter and ground cocoa beans.

Chocolate types are determined by the percent of cocoa mass they contain. Some of these definitions are set by law, others may be more vague. In the U.S. Milk Chocolate contains at least 10% Cocoa Mass and 12% Milk. Many contain more Cocoa Mass—up to 35%. Semi Sweet Chocolate contains at least 35% Cocoa Mass. Bittersweet Chocolate has no separate definition in the U.S., but must contain 35% Cocoa like Semi Sweet. In practice Bittersweet usually contains from 60% to 70% Cocoa Mass.

There are other factors which influence the taste of chocolate. Sometimes it is fun to taste chocolates from particular countries or even individual cocoa plantations.

Our Farmer’s Market does not have much dried fruit, but it is easily available at supermarkets. I like to add some fresh winter fruits, apples, pears, pineapple, along with a smidge of spice, cardamom, cinnamon, nutmeg.

Chicken Curry

A very easy recipe. Use any boneless chicken cut into bite size chunks. To reduce fat use Greek Yogurt instead of cream. 

Heat slowly, stop when very warm, if it separates, it will still taste good.

Garlic Shrimp

Cooking for 2? Use between 3/4 and 1 lb shrimp. If using frozen shrimp, carefully seal and bag remaining shrimp and keep frozen for another meal.

Suggested amounts of other ingredients:
1/3 cup olive oil
2 Tablespoons Garlic
1/2 teaspoon red pepper flakes
1 teaspoon paprika
1 Tablespoon lemon juice
1/4 cup chopped fresh parsley
