On Sale This Week: Blueberries and Chicken Featured

Blueberries are on sale this week! 

There are a lot of "official" days and months each year. Many of them have to do with food. We will be including more of such celebratory events in our menus below. 

Did you know that January is Soup MonthOatmeal Month and Hot Tea Month? Sounds like great food for cold winter days. Now, if only we could arrange a few cold winter days! Actually, that looks like a wish come true for this weekend. So, hunker down and plan to stay warm over the weekend with some soul-warming food.  

Speaking of tea, one of my favorite things to do, especially when I am sick, is to add 1/2 lemon (cut into wedges, but include the whole wedge, peel and all) and a generous teaspoon of honey. If you have a sore throat or a cough, it will help make you feel better! I’ve even been known to leave out the tea and just use lemon and honey.

January 20th is Cheese Lover’s Day

Recipe: Super Chunk Apple Sauce

Serves 4-6

3 Honey Crisp Apples
3 Pink Lady Apples
1 Tablespoon brandy (or sherry or fruit juice)
1/2cup dried tart cherries or raisins
1/4 cup brown sugar
1/4 teaspoon cinnamon (optional)
1/4 teaspoon cardamom (optional)

Put brandy in a small bowl and microwave 1 minute, or until very hot. Add dried fruit. Stir.

Core and quarter apples. Cook each variety separately in water to cover. (You can do this in the same pan and water.) Let cool enough to handle and use a spoon to scoop flesh away from skin. Place  flesh in a medium saucepan or microwavable bowl. Use a potato masher to roughly chop apples. 

Add brown sugar and dried fruit with juices to apples. Stir and add spices if using. Stir and heat to desired serving temperature (can be served cold, but best served warm.)

January 21 is Granola Bar Day

The video below specifies thighs, but it should work just fine for any bone-in chicken parts.

Crispy Baked Chicken

Or, Chicken Piccata

Recipe: Cauliflower with Herbed Oil

1 Head Cauliflower, separated into separate florets
2 Tablespoons Olive oil
1 teaspoon mixed fresh herbs, or 1/2 teaspoon dried herbs.
(suggestions—1/2 teaspoon finely minced garlic, 1/2 teaspoon finely chopped fresh rosemary—1/2 teaspoon Italian Seasoning, 1/2 teaspoons onion powder. Vary seasonings to your taste and availability.
1/2 teaspoons salt
Freshly ground pepper to taste

Place oil and herbs in a small microwavable bowl. Stir. Microwave on high until very hot. Stir again. Set aside.

Cook cauliflower in boiling water just until barely done. Drain. Place in a bowl big enough to hold it plus a couple of inches for mixing.

Pour the oil over the cauliflower and mix well.
