Here are some recipes using this week’s sale items:
This recipe came from Miriam Bowers. She received it from her mother who credited it to the “Mennonite Weekly Review.” It can be changed to suit your tastes and what you have available. It is a tasty and thrifty way to use up cooked or raw vegetables. The only ingredients which are absolutely necessary are the hamburger, potatoes and tomatoes. Enjoy this with a crusty loaf of bread on a cold winter night.
1 lb ground beef
1 cup peeled diced potatoes
1 cup scraped diced carrots
1 cup diced celery
4 cups canned tomatoes (two 15 oz. cans)
1/4 cup white or brown rice
3 cups water
salt and pepper to taste
1 teaspoon dried basil or marjoram
1 teaspoon dried thyme
1 bay leaf
In a large pot cook ground beef and diced onions together until meat is browned. Remove excess fat. Add remaining ingredients , bring mixture to a boil, then reduce heat. Cover and simmer for an hour. If you are using cooked or frozen vegetables add during last 20 minutes of cooking.
Blueberry Balsamic Chicken Breasts
This recipe is adapted from one published by the Driscoll Berry Company
2 Tablespoons olive oil
2 Tablespoons unsalted butter
4 chicken breasts
salt and pepper to taste
1 small onion, quartered and thinly sliced
2 cups blueberries, fresh or frozen
1/4 cup balsamic vinegar
1/4 cup brown sugar
2 Tablespoons fresh herbs, chopped (rosemary, thyme, marjoram)
Preheat oven to 350 degrees.
In a large heavy skillet heat 1 tablespoon olive oil and 1 Tablespoon butter over medium heat. Add the chicken breasts ad sauté on both sides until they are browned. Remove them to a baking pan.
Add the rest of the butter and olive oil to the skillet. Reduce heat to low. Cook onion until it is golden and translucent. If using fresh blueberries add them to the skillet and cook about 10 minutes until they are softened. Add the rest of the ingredients and cook until they are well mixed. If using frozen berries, just add to onions and follow immediately with the remaining ingredients.
Pour the blueberry mixture over the chicken breasts. Place in the oven and cook uncovered until chicken is cooked, about 20 minutes. Thermometer should read 165 in the thickest part. Remove chicken to serving platter and pour sauce over.
